Description
Almond date cookies are a delightful treat that combines the nutritional benefits of almonds and dates, offering a sweet snack without compromising health.
Ingredients
Scale
- 1 cup Medjool dates, pitted and chopped
- 1 cup almond flour
- 1/2 cup chopped almonds (or whole almonds for a chunkier texture)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a food processor, combine the chopped Medjool dates and almond flour, pulsing until a sticky dough forms. Add a teaspoon of water if too dry.
- Add the chopped almonds to the date mixture and pulse until evenly distributed.
- Roll small portions of the dough (about 1 tablespoon each) into balls and place them on the baking sheet, flattening each slightly.
- Bake for 10-12 minutes until golden brown and firm to the touch.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a nut-free version, substitute almond flour with oat flour or sunflower seed flour.
- Use dried figs or prunes instead of Medjool dates for a different flavor.
- For added sweetness, consider incorporating honey or maple syrup.
