Description

Almond Cloud Cookies are light and airy treats with a crunchy exterior and soft, chewy center, made from almond flour and egg whites for a nutty flavor and delicate texture.


Ingredients

  • 2 cups almond flour
  • 1 cup powdered sugar
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ teaspoon salt
  • Optional: sliced almonds for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together almond flour, powdered sugar, and salt until smooth and lump-free.
  3. In a separate bowl, beat egg whites with an electric mixer until stiff, glossy peaks form.
  4. Gently fold the dry mixture into the beaten egg whites, adding vanilla and almond extracts before the final fold. Be careful not to overmix.
  5. Use a cookie scoop or tablespoon to drop batter mounds onto prepared sheets, spacing about 2 inches apart. Sprinkle sliced almonds on top if desired.
  6. Bake for 15-18 minutes, or until edges turn golden brown.
  7. Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
