Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together almond flour, powdered sugar, and salt until smooth and lump-free.
- In a separate bowl, beat egg whites with an electric mixer until stiff, glossy peaks form.
- Gently fold the dry mixture into the beaten egg whites, adding vanilla and almond extracts before the final fold. Be careful not to overmix.
- Use a cookie scoop or tablespoon to drop batter mounds onto prepared sheets, spacing about 2 inches apart. Sprinkle sliced almonds on top if desired.
- Bake for 15-18 minutes, or until edges turn golden brown.
- Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
