  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup maple syrup or agave nectar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch or arrowroot powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut oil or butter, maple syrup or honey, vanilla extract, and salt. Mix until a crumbly dough forms.
  3. Press the dough evenly into the bottom of an 8×8-inch baking dish. Bake for 12-15 minutes until lightly golden. Let cool slightly.
  4. In a saucepan over medium heat, combine strawberries, maple syrup or agave, lemon juice, cornstarch, and vanilla extract. Stir and simmer for 3-5 minutes until thickened.
  5. Spread the strawberry filling evenly over the cooled crust.
  6. Bake again for 20-25 minutes until filling is bubbly and set.
  7. Let the bars cool at room temperature, then refrigerate for at least 2 hours before slicing.
  8. Slice into squares or rectangles and serve.
