Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- In a medium-sized bowl, whisk together the almond flour, baking soda, and salt.
- In a larger bowl, cream the softened butter and sugar together until light and fluffy. Add the egg and vanilla extract, mixing well.
- Slowly add the dry ingredients to the wet ingredients and stir until just combined. If using chocolate chips, fold them into the dough.
- Pour the mixture into the prepared baking dish and spread evenly. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then lift the bars out using the parchment paper. Transfer to a wire rack to cool completely before cutting into squares or bars.
