Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan or coat with cooking spray.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
- In another bowl, beat the eggs, then mix in the sugar, vegetable oil, and vanilla extract until the sugar is fully dissolved.
- Gradually combine the wet ingredients with the dry ingredients, stirring gently until just incorporated. Do not overmix.
- Fold in the chopped apples and nuts (if using).
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean. Watch closely during the last 10–15 minutes.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
