Description

Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

  • ¾ cup granulated sugar
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped apples (about 2 medium-sized apples)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan or coat with cooking spray.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
  3. In another bowl, beat the eggs, then mix in the sugar, vegetable oil, and vanilla extract until the sugar is fully dissolved.
  4. Gradually combine the wet ingredients with the dry ingredients, stirring gently until just incorporated. Do not overmix.
  5. Fold in the chopped apples and nuts (if using).
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean. Watch closely during the last 10–15 minutes.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
