Ingredients
Scale
- 1/2 cup chia seeds
- 2 cups unsweetened almond milk
- 2 tablespoons honey (or maple syrup for a vegan option)
- 1 cup diced apples (about 2 medium apples)
- 1 teaspoon ground cinnamon (plus extra for dusting)
- 1 teaspoon vanilla extract
- 1/2 cup walnuts (chopped and toasted)
Instructions
- In a mixing bowl, combine the chia seeds, almond milk, honey, ground cinnamon, and vanilla extract. Whisk well and let sit for 5-10 minutes, then whisk again. Cover and refrigerate for at least 2 hours or overnight.
- In a small skillet over medium heat, add the diced apples and a sprinkle of cinnamon. Cook for 5-7 minutes until tender and slightly caramelized. Remove from heat and let cool.
- Toast the chopped walnuts in a dry skillet over medium heat for 3-5 minutes until golden and fragrant. Remove from heat.
- In clear jars or glasses, layer the chia pudding, followed by a layer of caramelized apples, and then a sprinkle of toasted walnuts. Repeat layers until jars are filled, finishing with apples and walnuts on top.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- This pudding is best enjoyed cold, but can be gently heated in the microwave if desired.
- For a creamier texture, blend the chia pudding mixture before layering.
