- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In another bowl, cream the softened butter and sugar until light and fluffy. Add milk, eggs, and vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- In a separate bowl, mix brown sugar, cinnamon, and softened butter. Fold in diced apples.
- Scoop 1 tablespoon of batter into each muffin liner. Add 1 teaspoon of the apple filling, then top with another tablespoon of batter.
- Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for 5 minutes in the pan, then transfer to a wire rack.
- Whisk together powdered sugar, milk, and vanilla extract. Drizzle over cooled cupcakes.

- Use Granny Smith apples for a tart contrast to the sweet filling.
- For a nutty twist, add chopped pecans or walnuts to the filling.
