  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup diced apples (preferably Granny Smith)
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, cream the softened butter and sugar until light and fluffy. Add milk, eggs, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. In a separate bowl, mix brown sugar, cinnamon, and softened butter. Fold in diced apples.
  6. Scoop 1 tablespoon of batter into each muffin liner. Add 1 teaspoon of the apple filling, then top with another tablespoon of batter.
  7. Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for 5 minutes in the pan, then transfer to a wire rack.
  9. Whisk together powdered sugar, milk, and vanilla extract. Drizzle over cooled cupcakes.

Notes

  • Use Granny Smith apples for a tart contrast to the sweet filling.
  • For a nutty twist, add chopped pecans or walnuts to the filling.
  • Make sure cupcakes are fully cooled before glazing to prevent the glaze from melting.
