Instructions

  1. In a large bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly butter it. Pour 1/4 cup of batter into the skillet, tilting the pan to coat evenly. Cook for 1-2 minutes per side until golden. Repeat until all batter is used.
  3. Peel, core, and slice apples. In a skillet over medium heat, melt butter and sauté apples with lemon juice, sugar, and cinnamon for 5-7 minutes until tender. Let cool.
  4. Layer crepes and apple filling in a serving dish, starting and ending with crepes. Chill for 1 hour if desired.
