  • 1 large egg (for cheesecake layer)
  • ½ cup rolled oats
  • ½ cup all-purpose flour (for crisp topping)
  • ½ cup brown sugar, packed
  • 1 tsp cinnamon (for crisp topping)
  • ¼ cup unsalted butter, melted (for crisp topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan; optionally line bottom with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  3. Alternate adding dry ingredients and sour cream to wet mixture until just combined. Fold in diced apples.
  4. Beat cream cheese, sugar, and vanilla until smooth. Add egg and mix well.
  5. Pour half the apple batter into pan, spread evenly. Dollop cheesecake mixture on top and spread gently. Cover with remaining apple batter.
  6. Mix oats, flour, brown sugar, and cinnamon; stir in melted butter until crumbly. Sprinkle over top.
  7. Bake 60-70 minutes until a toothpick inserted comes out clean or with a few moist crumbs. Tent with foil if browning too fast.
  8. Cool in pan 15 minutes, then transfer to wire rack to cool completely. Slice and serve.
