- 2 medium apples, peeled and diced
- 2 tablespoons brown sugar (or coconut sugar)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter or coconut oil
- For the Crumble Topping:
- 1 cup (100 g) rolled oats
- 1/2 cup (60 g) all-purpose flour or gluten-free flour
- 1/4 cup (50 g) brown sugar or coconut sugar
- 1/2 teaspoon cinnamon
- 1/4 cup (60 g) butter or coconut oil, melted
Instructions
- In a bowl, mix almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Stir well and let sit for 10–15 minutes, stirring occasionally, until thickened.
- In a saucepan, melt butter and add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Sauté for 5–7 minutes until tender. Remove from heat and let cool slightly.
- In a bowl, mix oats, flour, brown sugar, and cinnamon. Stir in melted butter until it resembles wet sand.
- Spread crumble on a parchment-lined baking sheet and bake at 350°F (175°C) for 15–20 minutes, stirring halfway through. Let cool.
- In glasses or bowls, layer chia pudding, apple compote, and crumble. Repeat layers if desired, finishing with crumble on top.
- Serve immediately or chill for a few hours to let the flavors meld together.
