  • For the Apple Compote:
  • 2 medium apples, peeled and diced
  • 2 tablespoons brown sugar (or coconut sugar)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter or coconut oil
  • For the Crumble Topping:
  • 1 cup (100 g) rolled oats
  • 1/2 cup (60 g) all-purpose flour or gluten-free flour
  • 1/4 cup (50 g) brown sugar or coconut sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup (60 g) butter or coconut oil, melted

Instructions

  1. In a bowl, mix almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Stir well and let sit for 10–15 minutes, stirring occasionally, until thickened.
  2. In a saucepan, melt butter and add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Sauté for 5–7 minutes until tender. Remove from heat and let cool slightly.
  3. In a bowl, mix oats, flour, brown sugar, and cinnamon. Stir in melted butter until it resembles wet sand.
  4. Spread crumble on a parchment-lined baking sheet and bake at 350°F (175°C) for 15–20 minutes, stirring halfway through. Let cool.
  5. In glasses or bowls, layer chia pudding, apple compote, and crumble. Repeat layers if desired, finishing with crumble on top.
  6. Serve immediately or chill for a few hours to let the flavors meld together.
