Description

  • 6 cups of bread cubes (preferably challah or brioche)
  • 2 cups of unsweetened almond milk (or any milk of your choice)
  • 4 large eggs
  • 1 cup of peeled and diced apples (about 12 medium apples)
  • 1 cup of chopped pecans
  • 1/2 cup of brown sugar
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of vanilla extract
  • Pinch of salt
  • Optional: powdered sugar, maple syrup, or whipped cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a muffin tin with paper liners or grease each cup.
  2. Place the bread cubes into a large mixing bowl.
  3. In a separate bowl, whisk together the eggs, almond milk, brown sugar, cinnamon, nutmeg, vanilla extract, and salt until well combined.
  4. Pour the custard mixture over the bread cubes and stir to coat evenly.
  5. Fold in the diced apples and chopped pecans. Let the mixture sit for 10 minutes to absorb the custard.
  6. Divide the mixture evenly into the muffin cups, filling each about 3/4 full.
  7. Bake for 25–30 minutes or until golden brown and set in the center. A toothpick should come out clean.
  8. Let cool slightly before removing from the muffin tin. Serve warm or at room temperature with desired toppings.

Notes
