- 6 cups of bread cubes (preferably challah or brioche)
- 2 cups of unsweetened almond milk (or any milk of your choice)
- 4 large eggs
- 1 cup of peeled and diced apples (about 1–2 medium apples)
- 1 cup of chopped pecans
- 1/2 cup of brown sugar
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of nutmeg
- 1 teaspoon of vanilla extract
- Pinch of salt
- Optional: powdered sugar, maple syrup, or whipped cream for serving
Instructions
- Preheat the oven to 350°F (175°C). Prepare a muffin tin with paper liners or grease each cup.
- Place the bread cubes into a large mixing bowl.
- In a separate bowl, whisk together the eggs, almond milk, brown sugar, cinnamon, nutmeg, vanilla extract, and salt until well combined.
- Pour the custard mixture over the bread cubes and stir to coat evenly.
- Fold in the diced apples and chopped pecans. Let the mixture sit for 10 minutes to absorb the custard.
- Divide the mixture evenly into the muffin cups, filling each about 3/4 full.
- Bake for 25–30 minutes or until golden brown and set in the center. A toothpick should come out clean.
- Let cool slightly before removing from the muffin tin. Serve warm or at room temperature with desired toppings.
Notes
- Stale bread works best as it soaks up more custard.
- Customize with walnuts or omit nuts for allergy-friendly version.
