Apple Pie Cookies combine the classic flavors of apple pie in a handheld cookie form, featuring a buttery dough, spiced apple filling, and a lattice-style top for a charming finish.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 cups peeled and diced apples (about 2 medium apples)
- 1 tablespoon lemon juice
- Optional: 1/2 cup chopped nuts (walnuts or pecans)
Instructions
- Peel, core, and dice the apples. Toss with lemon juice, 1 tablespoon sugar, cinnamon, and nutmeg if desired. Set aside.
- Cream softened butter with granulated sugar and brown sugar until light and fluffy (2–3 minutes).
- Beat in eggs one at a time, then mix in vanilla extract.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to wet ingredients until just combined. Chill dough for 30 minutes.
- Divide dough in half. Roll one half to 1/8 inch thickness and cut out 3-inch rounds. Place on a parchment-lined baking sheet.
- Roll the second half and cut into thin strips for lattice tops.
- Spoon a small amount of apple filling onto each base. Arrange dough strips in a lattice pattern over the filling and press edges to seal. Optionally brush tops with milk and sprinkle with sugar.
- Preheat oven to 350°F (175°C). Bake for 13–16 minutes until edges are golden and filling is bubbling.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Optionally dust with powdered sugar before serving.
