Description

Apple Pie Cookies combine the classic flavors of apple pie in a handheld cookie form, featuring a buttery dough, spiced apple filling, and a lattice-style top for a charming finish.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1 tablespoon lemon juice
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)

Instructions

  1. Peel, core, and dice the apples. Toss with lemon juice, 1 tablespoon sugar, cinnamon, and nutmeg if desired. Set aside.
  2. Cream softened butter with granulated sugar and brown sugar until light and fluffy (2–3 minutes).
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to wet ingredients until just combined. Chill dough for 30 minutes.
  5. Divide dough in half. Roll one half to 1/8 inch thickness and cut out 3-inch rounds. Place on a parchment-lined baking sheet.
  6. Roll the second half and cut into thin strips for lattice tops.
  7. Spoon a small amount of apple filling onto each base. Arrange dough strips in a lattice pattern over the filling and press edges to seal. Optionally brush tops with milk and sprinkle with sugar.
  8. Preheat oven to 350°F (175°C). Bake for 13–16 minutes until edges are golden and filling is bubbling.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Optionally dust with powdered sugar before serving.
