- 1 cup dried apricots, chopped
- 1 cup slivered almonds, toasted
- 1 cup rolled oats
- 1/2 cup almond butter (or any nut butter of choice)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup whole almonds (for garnish, optional)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped dried apricots, toasted slivered almonds, and salt.
- In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Transfer the mixture into the prepared baking pan and press it firmly into an even layer.
- Bake for 20-25 minutes until the edges are golden brown and the center is set.
- Allow to cool in the pan for 10 minutes, then lift out using the parchment paper and cool completely on a wire rack.
- Once cooled, cut into rectangular bars.
- If desired, dust with powdered sugar and garnish with whole almonds and dried apricots.
- Store in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.
