Description

Apricot Almond Snack Bars are a delicious and nutritious option for healthy snacking, packed with essential nutrients and natural sweetness.


Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup slivered almonds, toasted
  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter of choice)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup whole almonds (for garnish, optional)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped dried apricots, toasted slivered almonds, and salt.
  3. In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until well combined.
  5. Transfer the mixture into the prepared baking pan and press it firmly into an even layer.
  6. Bake for 20-25 minutes until the edges are golden brown and the center is set.
  7. Allow to cool in the pan for 10 minutes, then lift out using the parchment paper and cool completely on a wire rack.
  8. Once cooled, cut into rectangular bars.
  9. If desired, dust with powdered sugar and garnish with whole almonds and dried apricots.
  10. Store in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.
