Description
Atlantic Beach Pie is a sweet, tangy, and creamy custard dessert with a buttery cracker crust, citrus filling made with lemon and lime juices, and topped with whipped cream and zesty garnishes. It’s the perfect balance of salty, sweet, and tart.

- 2 1/2 sleeves butter crackers (about 75 crackers/250 g)
- 1/2 cup butter, softened
- 1/4 cup packed light brown sugar
- 4 large egg yolks
- 2 large eggs
- 1 (14-oz) can sweetened condensed milk
- 1/3 cup fresh lemon juice (from about 2 large lemons)
- 1/3 cup fresh lime juice (from 3 to 4 large limes)
- 1 cup heavy cream
- 3 Tbsp light brown sugar
- 1 tsp finely grated lemon zest
- 1 tsp finely grated lime zest
- Flaky sea salt for garnish
Instructions
- In a food processor, pulse the butter crackers until finely ground with some pea-sized pieces (about 25–30 pulses).
- Add softened butter and 1/4 cup brown sugar; pulse 15 more times until crumbly.
- Transfer mixture to a 9-inch pie pan and press evenly on the bottom and sides. Freeze for 10 minutes while preheating oven to 350°F (175°C).
- Bake crust for 15 minutes or until golden brown and fragrant. Let cool for 10 minutes.
- In a bowl, whisk together egg yolks, eggs, and sweetened condensed milk. Add lemon and lime juices and whisk until smooth.
- Pour filling into the cooled crust and bake for 18 minutes, or until set but slightly jiggly in the center. Cool for 1 hour, then refrigerate for at least 2 hours.
- In a medium bowl, beat 1 cup heavy cream with 3 Tbsp light brown sugar until stiff peaks form (5–7 minutes).
- Top the chilled pie with whipped cream. Sprinkle with lemon and lime zest, and a pinch of flaky sea salt. Serve chilled.
