Description

Atlantic Beach Pie is a sweet, tangy, and creamy custard dessert with a buttery cracker crust, citrus filling made with lemon and lime juices, and topped with whipped cream and zesty garnishes. It’s the perfect balance of salty, sweet, and tart.


Ingredients

  • 2 1/2 sleeves butter crackers (about 75 crackers/250 g)
  • 1/2 cup butter, softened
  • 1/4 cup packed light brown sugar
  • 4 large egg yolks
  • 2 large eggs
  • 1 (14-oz) can sweetened condensed milk
  • 1/3 cup fresh lemon juice (from about 2 large lemons)
  • 1/3 cup fresh lime juice (from 3 to 4 large limes)
  • 1 cup heavy cream
  • 3 Tbsp light brown sugar
  • 1 tsp finely grated lemon zest
  • 1 tsp finely grated lime zest
  • Flaky sea salt for garnish

Instructions

  1. In a food processor, pulse the butter crackers until finely ground with some pea-sized pieces (about 25–30 pulses).
  2. Add softened butter and 1/4 cup brown sugar; pulse 15 more times until crumbly.
  3. Transfer mixture to a 9-inch pie pan and press evenly on the bottom and sides. Freeze for 10 minutes while preheating oven to 350°F (175°C).
  4. Bake crust for 15 minutes or until golden brown and fragrant. Let cool for 10 minutes.
  5. In a bowl, whisk together egg yolks, eggs, and sweetened condensed milk. Add lemon and lime juices and whisk until smooth.
  6. Pour filling into the cooled crust and bake for 18 minutes, or until set but slightly jiggly in the center. Cool for 1 hour, then refrigerate for at least 2 hours.
  7. In a medium bowl, beat 1 cup heavy cream with 3 Tbsp light brown sugar until stiff peaks form (5–7 minutes).
  8. Top the chilled pie with whipped cream. Sprinkle with lemon and lime zest, and a pinch of flaky sea salt. Serve chilled.

  • Use gluten-free crackers for a gluten-free version.
  • Coconut cream and dairy-free butter can be used to make it dairy-free.
  • Low-fat condensed milk and sugar substitutes can reduce calories.
  • Freeze crust briefly to help it hold shape while baking.
