These avocado brownies are a delightful twist on a classic dessert. They’re rich, fudgy, and incredibly moist, thanks to the creamy avocado. The flavor is deep and chocolatey, making them a perfect treat for any chocolate lover.


Ingredients

  • 2 ripe avocados (medium-sized)
  • 1 cup dark chocolate chips (or chopped dark chocolate)
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch (20×20 cm) baking pan or line it with parchment paper.
  2. Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash until smooth and creamy.
  3. In a microwave-safe bowl, combine the dark chocolate chips and microwave in 30-second intervals, stirring in between, until fully melted and smooth. Allow it to cool slightly.
  4. Add the melted chocolate, maple syrup, eggs, and vanilla extract to the mashed avocados. Mix well until smooth.
  5. In a separate bowl, whisk together the cocoa powder, baking powder, and sea salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  6. Transfer the brownie batter into the prepared baking pan, spreading it evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let the brownies cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

  • Store in an airtight container at room temperature for up to three days or refrigerate for up to a week.
  • To reheat, microwave for a few seconds. For freezing, wrap each brownie in plastic wrap and place in a freezer bag for up to three months.
  • For a vegan option, replace the eggs with flaxseed meal mixed with water.
  • Adding a pinch of espresso powder can enhance the chocolate flavor.
