A delicious and healthy breakfast or snack that combines avocado, matcha, and chia seeds for a nutrient-packed parfait.


Ingredients

  • 2 medium ripe avocados
  • 2 tablespoons matcha powder
  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk of choice)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/4 cup toasted coconut flakes (for garnish)
  • 1/2 cup fresh berries (optional, for garnish)

Instructions

  1. Prepare the chia pudding by combining chia seeds, almond milk, honey (or maple syrup), and vanilla extract in a bowl. Stir well and let sit for 10-15 minutes, then refrigerate for at least 2 hours or overnight.
  2. Make the avocado puree by blending the flesh of the avocados with honey (or maple syrup) until smooth. Optionally, add lemon juice.
  3. Prepare the matcha layer by mixing matcha powder with a few tablespoons of water to create a paste, then fold it into the chia pudding.
  4. Assemble the parfait by layering avocado puree and matcha chia pudding in clear glasses or jars.
  5. Garnish with toasted coconut flakes and fresh berries if desired.
  6. Serve immediately or refrigerate for up to a few hours before serving.

Notes

  • For a vegan option, use maple syrup instead of honey.
  • Almond milk can be replaced with coconut milk, oat milk, or any nut milk.
  • Store leftovers in an airtight container in the refrigerator for 2-3 days.
