- 2 medium ripe avocados
- 2 tablespoons matcha powder
- 1/2 cup chia seeds
- 2 cups almond milk (or any milk of choice)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1/4 cup toasted coconut flakes (for garnish)
- 1/2 cup fresh berries (optional, for garnish)
Instructions
- Prepare the chia pudding by combining chia seeds, almond milk, honey (or maple syrup), and vanilla extract in a bowl. Stir well and let sit for 10-15 minutes, then refrigerate for at least 2 hours or overnight.
- Make the avocado puree by blending the flesh of the avocados with honey (or maple syrup) until smooth. Optionally, add lemon juice.
- Prepare the matcha layer by mixing matcha powder with a few tablespoons of water to create a paste, then fold it into the chia pudding.
- Assemble the parfait by layering avocado puree and matcha chia pudding in clear glasses or jars.
- Garnish with toasted coconut flakes and fresh berries if desired.
- Serve immediately or refrigerate for up to a few hours before serving.
Notes
- For a vegan option, use maple syrup instead of honey.
- Almond milk can be replaced with coconut milk, oat milk, or any nut milk.
- Store leftovers in an airtight container in the refrigerator for 2-3 days.
