Description

This Baked Blueberry Cream Cheese French Toast is a delightful and comforting breakfast casserole made with thick bread, a creamy cheese filling, juicy blueberries, and a sweet custard base. Perfect for brunch or make-ahead mornings.

Ingredients

Scale
  • 10 slices of thick bread (such as brioche or challah)
  • 8 oz cream cheese, softened
  • 2 cups blueberries (fresh or frozen)
  • 6 large eggs
  • 2 cups milk (whole or any dairy-free alternative)
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon butter (for greasing the baking dish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
  2. Cut the bread into cubes for easier soaking.
  3. In a medium bowl, beat cream cheese until smooth. Gently fold in half of the blueberries.
  4. In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
  5. Layer half the bread cubes in the baking dish. Spread the cream cheese-blueberry mixture over the bread, then top with remaining bread cubes. Pour the custard over the entire dish and gently press the bread down to soak. Sprinkle remaining blueberries on top.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes until golden and set.
  7. Let rest for a few minutes before slicing. Serve warm, optionally topped with powdered sugar or maple syrup.

Notes

  • Use slightly stale bread to prevent mushiness and improve custard absorption.
  • Assemble the night before for an easy morning bake.
  • Substitute blueberries with other berries or mix for variety.
  • Add lemon or orange zest to the custard for a citrus twist.
  • Top with nuts or Greek yogurt for extra texture and creaminess.
