- 125g all-purpose flour (or gluten-free baking flour)
- 25g cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/4 tsp nutmeg
- 56g unsalted butter, melted (or coconut oil)
- 106g light brown sugar (or erythritol)
- 113ml buttermilk (or almond/oat milk + 1 tsp vinegar)
- 1 egg, at room temperature
- 1 tsp vanilla extract
- Vanilla Glaze:
- 125g confectioners’ sugar (or powdered sugar substitute)
- 2 tbsp milk (dairy or non-dairy)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and grease a doughnut pan with butter or spray.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and nutmeg.
- In a separate bowl, mix buttermilk, melted butter, egg, and vanilla until smooth and well combined.
- Fold the wet mixture into the dry ingredients gently until just combined. Avoid overmixing.
- Spoon or pipe the batter into prepared doughnut molds, filling each about 3/4 full.
- Bake for 11–13 minutes or until doughnuts spring back when touched. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together confectioners’ sugar, milk, vanilla, and salt until smooth.
- Dip each cooled doughnut top into the glaze. Let excess drip off, then set on a rack to let the glaze set.
Notes
- Add orange, almond, or peppermint extract for extra flavor.
- Top glazed doughnuts with sprinkles, crushed nuts, or coconut before the glaze sets.
- Store in an airtight container at room temperature for up to 2 days.
