Description

These Baked Chocolate Cake Doughnuts are rich, tender, and topped with a smooth vanilla glaze. They’re the perfect indulgent treat with a moist cake texture and deep chocolate flavor, made lighter by baking instead of frying. Ideal for breakfast, brunch, or dessert!


Ingredients

  • 125g all-purpose flour (or gluten-free baking flour)
  • 25g cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/4 tsp nutmeg
  • 56g unsalted butter, melted (or coconut oil)
  • 106g light brown sugar (or erythritol)
  • 113ml buttermilk (or almond/oat milk + 1 tsp vinegar)
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • Vanilla Glaze:
  • 125g confectioners’ sugar (or powdered sugar substitute)
  • 2 tbsp milk (dairy or non-dairy)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a doughnut pan with butter or spray.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and nutmeg.
  3. In a separate bowl, mix buttermilk, melted butter, egg, and vanilla until smooth and well combined.
  4. Fold the wet mixture into the dry ingredients gently until just combined. Avoid overmixing.
  5. Spoon or pipe the batter into prepared doughnut molds, filling each about 3/4 full.
  6. Bake for 11–13 minutes or until doughnuts spring back when touched. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the glaze, whisk together confectioners’ sugar, milk, vanilla, and salt until smooth.
  8. Dip each cooled doughnut top into the glaze. Let excess drip off, then set on a rack to let the glaze set.

Notes

  • Add orange, almond, or peppermint extract for extra flavor.
  • Top glazed doughnuts with sprinkles, crushed nuts, or coconut before the glaze sets.
