Ingredients

  • 2 cups diced apples (about 2 medium apples)
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar (packed)
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional cinnamon and brown sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, ground cinnamon, brown sugar, baking powder, and salt. Mix well.
  3. In another bowl, whisk together the milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Gently fold in the diced apples and chopped walnuts (if using).
  5. Spoon the oatmeal mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle extra cinnamon and brown sugar on top if desired.
  6. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Let the oatmeal cups cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
