- 1/4 cup brown sugar (packed)
- 1 cup milk (dairy or non-dairy)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Additional cinnamon and brown sugar for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, ground cinnamon, brown sugar, baking powder, and salt. Mix well.
- In another bowl, whisk together the milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Gently fold in the diced apples and chopped walnuts (if using).
- Spoon the oatmeal mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle extra cinnamon and brown sugar on top if desired.
- Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Let the oatmeal cups cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
