- 2 large eggs (or flaxseed eggs for vegan version)
- 1 tsp vanilla extract
- 4 tbsp melted butter or coconut oil
- 2–3 large apples (Honeycrisp or Gala), peeled and diced
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9×13-inch baking dish.
- In a large bowl, whisk together oats, baking powder, cinnamon, nutmeg, salt, and brown sugar.
- In a separate bowl, whisk together the milk, eggs (or flaxseed eggs), and vanilla extract.
- Combine the wet and dry mixtures, stirring until well incorporated.
- Fold in melted butter or coconut oil.
- Spread the diced apples evenly in the greased baking dish.
- Pour the oatmeal mixture over the apples and spread evenly.
- Bake for 35–45 minutes until the top is golden and the center is set.
- Let it cool slightly before serving.
