  • 4 tbsp melted butter or coconut oil
  • 23 large apples (Honeycrisp or Gala), peeled and diced

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together oats, baking powder, cinnamon, nutmeg, salt, and brown sugar.
  3. In a separate bowl, whisk together the milk, eggs (or flaxseed eggs), and vanilla extract.
  4. Combine the wet and dry mixtures, stirring until well incorporated.
  5. Fold in melted butter or coconut oil.
  6. Spread the diced apples evenly in the greased baking dish.
  7. Pour the oatmeal mixture over the apples and spread evenly.
  8. Bake for 35–45 minutes until the top is golden and the center is set.
  9. Let it cool slightly before serving.
