- 2 cups rolled oats
- 3 ripe bananas, mashed
- 1 ½ cups almond milk
- ¼ cup honey or maple syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ cup walnuts, chopped
- ¼ teaspoon salt
- Additional banana slices for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed ripe bananas, almond milk, honey, ground cinnamon, and vanilla extract. Mix well.
- In a separate bowl, mix the rolled oats, chopped walnuts, and salt together.
- Gradually add the dry mixture to the wet mixture, stirring until well combined.
- Transfer the oatmeal mixture into the prepared baking dish, spreading it out evenly.
- Bake for 30-35 minutes, or until the top is golden brown and the edges are slightly crispy.
- Let it cool for a few minutes, slice into squares, and serve warm.
Notes
- Store leftovers in an airtight container in the refrigerator for up to five days.
- To reheat, warm in the microwave for a minute or two.
- For freezing, cut into portions and wrap tightly; can be frozen for up to three months.
