Ingredients

  • 3 ripe bananas, mashed
  • 1 ½ cups almond milk
  • ¼ cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup walnuts, chopped
  • ¼ teaspoon salt
  • Additional banana slices for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed ripe bananas, almond milk, honey, ground cinnamon, and vanilla extract. Mix well.
  3. In a separate bowl, mix the rolled oats, chopped walnuts, and salt together.
  4. Gradually add the dry mixture to the wet mixture, stirring until well combined.
  5. Transfer the oatmeal mixture into the prepared baking dish, spreading it out evenly.
  6. Bake for 30-35 minutes, or until the top is golden brown and the edges are slightly crispy.
  7. Let it cool for a few minutes, slice into squares, and serve warm.
