Description

  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup yogurt or sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups fresh peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Cream the softened butter and sugar in a large bowl until light and fluffy (about 3–5 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Then mix in the yogurt or sour cream and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined. Do not overmix.
  6. Fold in the sliced peaches and lemon juice gently until evenly distributed.
  7. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  8. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the cake in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
