Description

  • 1 cup white whole wheat flour
  • 1 1/4 cups all-purpose flour
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup unsalted butter, cold and cut into pieces
  • 2 ripe bananas, about 1 cup mashed
  • 1 egg, lightly beaten
  • 1 tbsp water
  • 2 tbsp sugar (for topping)
  • 1/4 tsp cinnamon (for topping)
  • 1/2 cup confectioner’s sugar
  • 2 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 23 tsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together white whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. Stir in mashed bananas and lightly beaten egg until just combined.
  5. Turn dough onto a floured surface and knead gently 5-6 times. Shape into an 8-inch circle and brush the top lightly with water.
  6. Mix granulated sugar and cinnamon for topping and sprinkle over the dough.
  7. Cut the dough into 8 wedges and transfer them to the prepared baking sheet.
  8. Bake for 15-18 minutes or until light golden brown. Let cool on a wire rack.
  9. In a small bowl, mix confectioner’s sugar, brown sugar, vanilla extract, and milk to make the glaze. Drizzle over cooled scones before serving.
