- 1 cup white whole wheat flour
- 1 1/4 cups all-purpose flour
- 1/3 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup unsalted butter, cold and cut into pieces
- 2 ripe bananas, about 1 cup mashed
- 1 egg, lightly beaten
- 1 tbsp water
- 2 tbsp sugar (for topping)
- 1/4 tsp cinnamon (for topping)
- 1/2 cup confectioner’s sugar
- 2 tbsp brown sugar
- 1/2 tsp vanilla extract
- 2–3 tsp milk
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together white whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Stir in mashed bananas and lightly beaten egg until just combined.
- Turn dough onto a floured surface and knead gently 5-6 times. Shape into an 8-inch circle and brush the top lightly with water.
- Mix granulated sugar and cinnamon for topping and sprinkle over the dough.
- Cut the dough into 8 wedges and transfer them to the prepared baking sheet.
- Bake for 15-18 minutes or until light golden brown. Let cool on a wire rack.
- In a small bowl, mix confectioner’s sugar, brown sugar, vanilla extract, and milk to make the glaze. Drizzle over cooled scones before serving.
Notes
- Do not overmix the dough to keep scones tender.
- Use very ripe bananas for maximum flavor and moisture.
- Store scones in an airtight container for up to 3 days or freeze for longer storage.
