Description

  • Vegetable oil (for frying)

Instructions

  1. Peel and mash the ripe bananas in a mixing bowl until mostly smooth.
  2. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon (if using), and sugar.
  3. Create a well in the center of the dry ingredients and pour in the mashed bananas and milk.
  4. Gently fold the mixture until just combined. Do not overmix.
  5. Heat vegetable oil in a skillet or deep pan over medium-high heat.
  6. Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
  7. Fry for 2-3 minutes on each side until golden brown, then transfer to a paper towel-lined plate to drain.
  8. Serve warm, optionally dusted with powdered sugar or drizzled with honey or maple syrup.
