Description

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

  • 1/4 cup brown sugar (or coconut sugar)
  • 2 large ripe bananas, mashed
  • 1/2 cup Greek yogurt (or dairy-free yogurt)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs (or flax eggs)
  • 1/2 cup walnuts or pecans (optional, chopped and toasted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×9 inch baking pan with parchment paper.
  2. In a large bowl, combine oats, baking soda, baking powder, salt, cinnamon, and brown sugar. Mix well.
  3. In a separate bowl, mash the bananas until smooth. Add Greek yogurt, honey, vanilla extract, and eggs. Mix until combined.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined. Fold in nuts if using.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
