- Cookies:
- 3 cups 1-minute oats
- 3 cups bread flour (or gluten-free flour blend)
- 1 tbsp ground cinnamon
- 1 tbsp cornstarch
- 2 tsp baking powder
- 3/4 tsp salt
- 1 1/2 cups light brown sugar (packed)
- 1 cup butter-flavored vegetable shortening or butter
- 1 cup mashed banana (about 2 1/2 ripe bananas)
- 1/4 cup light corn syrup
- 1 tbsp vanilla extract
- Cream Filling:
- 4 oz cream cheese (softened, or dairy-free alternative)
- 1/4 cup unsalted butter (softened)
- 2 1/2 cups powdered sugar
- 1–2 tbsp heavy whipping cream (or dairy-free milk)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk oats, flour, cinnamon, cornstarch, baking powder, and salt.
- In a stand mixer, cream brown sugar and shortening (or butter) for 2 minutes until fluffy. Add mashed banana, corn syrup, and vanilla extract; mix on high speed until light and creamy.
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- Scoop dough onto prepared baking sheets and press each scoop to 1/2 inch thickness. Bake for 6–7 minutes, until edges are set but centers look soft.
- Cool on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
- For the filling, beat cream cheese and butter until smooth. Gradually mix in powdered sugar. Add heavy cream and vanilla, beating until fluffy.
- Pipe or spread filling onto half of the cookies and sandwich with remaining cookies.
Notes
- Chill dough for 20 minutes if too soft for scooping.
- Add mini chocolate chips or crushed walnuts for texture.
- Store in the fridge in an airtight container for up to 4 days.
