    • 3 cups 1-minute oats
    • 3 cups bread flour (or gluten-free flour blend)
    • 1 tbsp ground cinnamon
    • 1 tbsp cornstarch
    • 2 tsp baking powder
    • 3/4 tsp salt
    • 1 1/2 cups light brown sugar (packed)
    • 1 cup butter-flavored vegetable shortening or butter
    • 1 cup mashed banana (about 2 1/2 ripe bananas)
    • 1/4 cup light corn syrup
    • 1 tbsp vanilla extract

 

  • Cream Filling:
  • 4 oz cream cheese (softened, or dairy-free alternative)
  • 1/4 cup unsalted butter (softened)
  • 2 1/2 cups powdered sugar
  • 12 tbsp heavy whipping cream (or dairy-free milk)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk oats, flour, cinnamon, cornstarch, baking powder, and salt.
  3. In a stand mixer, cream brown sugar and shortening (or butter) for 2 minutes until fluffy. Add mashed banana, corn syrup, and vanilla extract; mix on high speed until light and creamy.
  4. Gradually add dry ingredients to the wet mixture, mixing just until combined.
  5. Scoop dough onto prepared baking sheets and press each scoop to 1/2 inch thickness. Bake for 6–7 minutes, until edges are set but centers look soft.
  6. Cool on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
  7. For the filling, beat cream cheese and butter until smooth. Gradually mix in powdered sugar. Add heavy cream and vanilla, beating until fluffy.
  8. Pipe or spread filling onto half of the cookies and sandwich with remaining cookies.

Notes

  • Chill dough for 20 minutes if too soft for scooping.
  • Add mini chocolate chips or crushed walnuts for texture.
  • Store in the fridge in an airtight container for up to 4 days.
