  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 large ripe banana, mashed
  • 1 cup vanilla pudding mix (instant)
  • 1 3/4 cups milk
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, stir together the melted butter and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Mix in mashed banana and vanilla extract.
  4. Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Do not over-mix.
  5. In a separate bowl, whisk together vanilla pudding mix and milk. Let sit for 5 minutes to thicken slightly.
  6. Pour half of the brownie batter into the prepared pan. Spread the pudding mixture evenly over it. Top with remaining brownie batter. Optionally, sprinkle mini marshmallows on top.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Let brownies cool completely in the pan before slicing into squares.
