- 1/3 cup unsweetened cocoa powder

- 2 large eggs
- 1 teaspoon vanilla extract
- 1 large ripe banana, mashed
- 1 cup vanilla pudding mix (instant)
- 1 3/4 cups milk
- 1/2 cup mini marshmallows (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, stir together the melted butter and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Mix in mashed banana and vanilla extract.
- Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Do not over-mix.
- In a separate bowl, whisk together vanilla pudding mix and milk. Let sit for 5 minutes to thicken slightly.
- Pour half of the brownie batter into the prepared pan. Spread the pudding mixture evenly over it. Top with remaining brownie batter. Optionally, sprinkle mini marshmallows on top.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let brownies cool completely in the pan before slicing into squares.
