  • 1 cup heavy whipping cream, whipped

Instructions

  1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into a 9-inch springform pan and bake for 10 minutes. Let cool completely.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla extract. Mix in eggs one at a time. Stir in mashed bananas, lemon juice, and optional cinnamon.
  3. Pour the filling over the cooled crust. Bake for 60 minutes, until edges are set and center slightly wobbly. Turn off oven, crack the door, and cool cheesecake in oven for 1 hour.
  4. Prepare banana pudding and fold in whipped cream. Spread over the cooled cheesecake. Cover and refrigerate for at least 4 hours or overnight.
