Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan thoroughly with butter and sprinkle the brown sugar evenly across the bottom.
  2. Slice two of the ripe bananas into 1/4 inch thick rounds. Arrange these slices over the brown sugar in a decorative pattern.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Alternately add the dry mixture and buttermilk to the wet ingredients, beginning and ending with the flour mixture. Stir until just combined.
  6. Fold in the remaining mashed bananas gently to combine evenly.
  7. Pour the batter over the arranged banana slices, smoothing the top with a spatula.
