Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and poke holes in them with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender.
  2. While the sweet potatoes are baking, mix the shredded chicken with BBQ sauce in a bowl. Make sure the chicken is well-coated.
  3. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the insides with a fork. Spoon the BBQ chicken mixture into each sweet potato.
  4. Top each stuffed sweet potato with shredded cheese. Return them to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly. Remove from the oven and sprinkle with chopped green onions before serving.
