Description
BBQ Chicken Stuffed Sweet Potatoes is a delightful blend of sweet and smoky flavors, perfect for family dinners or casual gatherings.
Ingredients
Scale
- 4 medium sweet potatoes
- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and poke holes in them with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender.
- While the sweet potatoes are baking, mix the shredded chicken with BBQ sauce in a bowl. Make sure the chicken is well-coated.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the insides with a fork. Spoon the BBQ chicken mixture into each sweet potato.
- Top each stuffed sweet potato with shredded cheese. Return them to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly. Remove from the oven and sprinkle with chopped green onions before serving.
Notes
- For a vegan option, substitute chicken with shredded jackfruit or chickpeas.
- Use dairy-free cheese for a lactose-free version.
- Try different BBQ sauces for unique flavor profiles, like spicy or honey BBQ.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, microwave the stuffed sweet potatoes for a few minutes until heated through.
