Description

BBQ Grilled Shrimp & Avocado Flatbreads are a delightful treat that combines smoky grilled shrimp with creamy avocado, perfect for summer gatherings or cozy dinners.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 ripe avocados, sliced
  • 4 flatbreads or tortillas
  • 1/2 cup BBQ sauce (your favorite brand)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/2 medium red onion (thinly sliced)
  • 1/4 cup fresh cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the peeled and deveined shrimp with olive oil, lime juice, salt, and pepper. Toss to coat and let marinate for about 15-20 minutes.
  2. Preheat your grill to medium-high heat.
  3. Place the marinated shrimp on the grill and cook for about 2-3 minutes on each side, brushing with BBQ sauce during the last minute.
  4. Grill the flatbreads for about 1-2 minutes on each side until warm and marked.
  5. On each flatbread, layer sliced avocado, grilled shrimp, red onion, and cilantro.
  6. Drizzle additional BBQ sauce over the assembled flatbreads.
  7. Cut into slices or serve whole and enjoy warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to two days.
  • Reheat in a preheated oven at 350°F for about 10 minutes.
  • Avoid freezing as avocado may not maintain its texture.
