BBQ Grilled Shrimp & Avocado Flatbreads are a delightful treat that combines smoky grilled shrimp with creamy avocado, perfect for summer gatherings or cozy dinners.

- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados, sliced
- 4 flatbreads or tortillas
- 1/2 cup BBQ sauce (your favorite brand)
- 2 tablespoons olive oil
- 2 tablespoons lime juice (freshly squeezed)
- 1/2 medium red onion (thinly sliced)
- 1/4 cup fresh cilantro (chopped)
- Salt and pepper to taste
Instructions
- In a bowl, combine the peeled and deveined shrimp with olive oil, lime juice, salt, and pepper. Toss to coat and let marinate for about 15-20 minutes.
- Preheat your grill to medium-high heat.
- Place the marinated shrimp on the grill and cook for about 2-3 minutes on each side, brushing with BBQ sauce during the last minute.
- Grill the flatbreads for about 1-2 minutes on each side until warm and marked.
- On each flatbread, layer sliced avocado, grilled shrimp, red onion, and cilantro.
- Drizzle additional BBQ sauce over the assembled flatbreads.
- Cut into slices or serve whole and enjoy warm.
Notes
- Store leftovers in an airtight container in the refrigerator for up to two days.
- Reheat in a preheated oven at 350°F for about 10 minutes.
- Avoid freezing as avocado may not maintain its texture.
