Description

Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup fresh mixed berries (blueberries, raspberries, or chopped strawberries)
  • 4 ounces cream cheese, softened (optional for swirl)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners or grease well.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy (about 3-5 minutes).
  4. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  5. Fold in the sour cream, then gradually mix in the dry ingredients just until combined.
  6. Gently fold in the mixed berries.
  7. (Optional) In a separate bowl, mix cream cheese with 1 tablespoon sugar until smooth for a swirl effect.
  8. Fill each muffin cup 2/3 full with batter. If using cream cheese swirl, add a dollop and swirl it lightly into the top of each muffin.
  9. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.

  • Do not overmix the batter to keep muffins light and fluffy.
  • Chop larger berries like strawberries for even distribution.
