Ingredients

- 1 cup quinoa
- 2 cups water
- 4 cups fresh spinach (washed and chopped)
- 2 cups mixed berries (strawberries, blueberries, raspberries, chopped if necessary)
- 1 cup feta cheese (crumbled)
- 1/2 cup walnuts (chopped)
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water to remove bitterness. In a medium pot, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until fluffy and water is absorbed. Let cool.
- In a small bowl, whisk together honey, lemon juice, and olive oil. Season with salt and pepper to taste.
- In a large bowl, combine cooked quinoa, chopped spinach, mixed berries, crumbled feta cheese, and chopped walnuts. Gently toss to combine.
- Drizzle the honey-lemon dressing over the salad and toss gently to coat evenly.
