Description

A refreshing and nutritious Berry Quinoa Salad that combines nutty quinoa with sweet berries, perfect for summer picnics or light lunches.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 4 cups fresh spinach (washed and chopped)
  • 2 cups mixed berries (strawberries, blueberries, raspberries, chopped if necessary)
  • 1 cup feta cheese (crumbled)
  • 1/2 cup walnuts (chopped)
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove bitterness. In a medium pot, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until fluffy and water is absorbed. Let cool.
  2. In a small bowl, whisk together honey, lemon juice, and olive oil. Season with salt and pepper to taste.
  3. In a large bowl, combine cooked quinoa, chopped spinach, mixed berries, crumbled feta cheese, and chopped walnuts. Gently toss to combine.
  4. Drizzle the honey-lemon dressing over the salad and toss gently to coat evenly.

  • Store in an airtight container in the refrigerator for 2-3 days.
  • For a vegan option, skip the feta cheese or use a plant-based alternative.
  • For gluten-free, ensure quinoa is certified gluten-free.
