Ingredients

  • 1/2 cup unsalted butter, thinly sliced
  • 3 to 4 tbsp ice water
  • 6 tbsp rainbow sprinkles (plus more for topping)
  • 1 large egg, beaten with 1 tbsp water
  • 2 cups heavy cream
  • 1 cup vanilla cake mix
  • 1 (3.4-oz.) package instant vanilla pudding mix
  • 1 1/2 cups cold milk

Instructions

  1. Prepare the crust: In a mixing bowl, whisk together flour, sugar, and salt. Cut in butter until crumbly. Gradually add ice water until dough holds together. Fold in half the sprinkles. Wrap and chill dough for 1 hour.
  2. Roll and bake the crust: Preheat oven to 425°F (220°C). Roll chilled dough to 1/4-inch thickness. Place into pie dish, crimp edges, and brush with egg wash. Line with parchment and pie weights. Bake 12 minutes, remove weights and bake 5 more minutes. Let cool completely.
  3. Create the filling: Beat heavy cream to soft peaks, add vanilla cake mix, and beat to stiff peaks. In a separate bowl, whisk milk with pudding mix until thick. Fold pudding into whipped cream. Stir in remaining sprinkles.
  4. Assemble and chill: Pour filling into cooled crust and smooth top. Top with additional sprinkles. Cover and chill for at least 5 hours before serving.
