  • 1/3 cup rainbow sprinkles
  • 3/4 cup heavy cream, cold (plus extra for brushing)
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in chilled butter using a pastry cutter or your hands until mixture resembles coarse crumbs (pea-sized butter pieces).
  4. Stir in sprinkles, then place the bowl in the fridge to keep butter cold.
  5. In a separate bowl, whisk together cream, egg, vanilla extract, and almond extract (if using).
  6. Pour wet mixture into dry ingredients and stir gently until just combined. Avoid overmixing.
  7. Pat dough into a 1.5-inch thick circle on the prepared baking sheet. Freeze for 1–2 hours uncovered.
  8. Slice dough into 8 triangles, brush tops with extra heavy cream.
  9. Bake for 20–22 minutes or until lightly golden. Cool slightly on a wire rack and enjoy!
