Description

Delicious Biscoff Banana Cheesecake Bars with a creamy filling and crunchy cookie crust.


Ingredients

  • 200 grams Biscoff cookies (about 2 cups, crushed)
  • 100 grams unsalted butter (melted, about 1/2 cup)
  • 400 grams cream cheese (softened, about 14 oz)
  • 2 medium ripe bananas (mashed)
  • 150 grams granulated sugar (about 3/4 cup)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking pan with parchment paper.
  2. In a mixing bowl, combine the crushed Biscoff cookies and melted butter, then press into the bottom of the pan to form the crust. Bake for about 10 minutes until golden brown.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Add the mashed bananas, sugar, eggs, vanilla extract, and salt, and mix until well combined.
  4. Pour the cheesecake filling over the cooled crust and spread evenly.
  5. Bake for 25-30 minutes until the edges are set and the center is slightly jiggly.
  6. Let the bars cool at room temperature for 30 minutes, then refrigerate for at least 2 hours until fully chilled.
  7. Lift the bars out using the parchment paper, cut into squares, and serve.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to five days.
  • For longer storage, freeze wrapped tightly in plastic wrap for up to three months.
