Delicious Biscoff Banana Cheesecake Bars with a creamy filling and crunchy cookie crust.

- 200 grams Biscoff cookies (about 2 cups, crushed)
- 100 grams unsalted butter (melted, about 1/2 cup)
- 400 grams cream cheese (softened, about 14 oz)
- 2 medium ripe bananas (mashed)
- 150 grams granulated sugar (about 3/4 cup)
- 2 large eggs
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking pan with parchment paper.
- In a mixing bowl, combine the crushed Biscoff cookies and melted butter, then press into the bottom of the pan to form the crust. Bake for about 10 minutes until golden brown.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add the mashed bananas, sugar, eggs, vanilla extract, and salt, and mix until well combined.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Bake for 25-30 minutes until the edges are set and the center is slightly jiggly.
- Let the bars cool at room temperature for 30 minutes, then refrigerate for at least 2 hours until fully chilled.
- Lift the bars out using the parchment paper, cut into squares, and serve.
Notes
- Store leftovers in an airtight container in the refrigerator for up to five days.
- For longer storage, freeze wrapped tightly in plastic wrap for up to three months.
- Best served chilled, optionally garnished with caramel sauce or crushed Biscoff cookies.
