Description

A luxurious Black Forest Cheesecake featuring a chocolate cookie crust, creamy cocoa-infused cheesecake filling studded with sweet cherries, and a whipped cream topping garnished with chocolate shavings and cherries.


Ingredients

  • 1 ½ cups chocolate cookie crumbs (about 20 cookies)
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup unsweetened cocoa powder
  • 1 cup cherry pie filling (or fresh cherries)
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings and extra cherries for garnish

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix cookie crumbs, melted butter, and sugar. Press into a 9-inch springform pan and bake 10 minutes. Cool.
  2. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla, then eggs one at a time. Blend in sour cream and cocoa powder.
  3. Fold in cherry pie filling gently. Pour over cooled crust and smooth top.
  4. Bake 50–60 minutes until edges are set and center jiggles. Turn off oven, crack door, and cool inside 1 hour. Refrigerate at least 4 hours or overnight.
  5. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread or pipe atop cheesecake.
  6. Garnish with chocolate shavings and cherries. Slice and serve chilled.

  • Substitute dairy-free cream cheese and coconut cream for a dairy-free version.
  • Use sugar substitutes to reduce sugar content.
