- 1 ½ cups chocolate cookie crumbs (about 20 cookies)
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- ¼ cup unsweetened cocoa powder
- 1 cup cherry pie filling (or fresh cherries)
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- Chocolate shavings and extra cherries for garnish
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix cookie crumbs, melted butter, and sugar. Press into a 9-inch springform pan and bake 10 minutes. Cool.
- In a large bowl, beat cream cheese until smooth. Add sugar and vanilla, then eggs one at a time. Blend in sour cream and cocoa powder.
- Fold in cherry pie filling gently. Pour over cooled crust and smooth top.
- Bake 50–60 minutes until edges are set and center jiggles. Turn off oven, crack door, and cool inside 1 hour. Refrigerate at least 4 hours or overnight.
- Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread or pipe atop cheesecake.
- Garnish with chocolate shavings and cherries. Slice and serve chilled.
