- 1.5 cups buttermilk
- 1 cup blackberries (approximately 6 oz.)
- 1/2 stick butter, melted (for glaze)
- 1 cup confectioner’s sugar (for glaze)
- Zest of 1 lemon (for glaze)
- 1 tablespoon lemon juice (for glaze)
- 1 teaspoon lemon juice (for glaze)
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish with cooking spray.
- In a large bowl, mix flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
- Grate frozen butter into the dry ingredients and toss until evenly coated.
- Gradually add buttermilk in thirds, mixing gently after each addition until a sticky dough forms.
- Turn dough onto a floured surface, fold in half twice, and pat into a 1 1/4-inch thick rectangle.
- Spread one-third of the blackberries on top, fold the dough again, and repeat until all berries are incorporated.
- Cut out biscuits using a cutter or knife and place in the prepared baking dish.
- Bake for 20–25 minutes until golden brown and fully cooked through.
- While baking, whisk together confectioner’s sugar, melted butter, lemon zest, and lemon juice to form the glaze.
- Brush glaze over warm biscuits immediately after baking and serve warm.
