Description

These Blackberry Buttermilk Biscuits with Lemon Glaze are tender, flaky, and bursting with juicy blackberries. Topped with a zesty lemon glaze, they’re perfect for breakfast, brunch, or a sweet afternoon treat.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1.5 sticks frozen butter, grated
  • 1.5 cups buttermilk
  • 1 cup blackberries (approximately 6 oz.)
  • 1/2 stick butter, melted (for glaze)
  • 1 cup confectioner’s sugar (for glaze)
  • Zest of 1 lemon (for glaze)
  • 1 tablespoon lemon juice (for glaze)
  • 1 teaspoon lemon juice (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish with cooking spray.
  2. In a large bowl, mix flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. Grate frozen butter into the dry ingredients and toss until evenly coated.
  4. Gradually add buttermilk in thirds, mixing gently after each addition until a sticky dough forms.
  5. Turn dough onto a floured surface, fold in half twice, and pat into a 1 1/4-inch thick rectangle.
  6. Spread one-third of the blackberries on top, fold the dough again, and repeat until all berries are incorporated.
  7. Cut out biscuits using a cutter or knife and place in the prepared baking dish.
  8. Bake for 20–25 minutes until golden brown and fully cooked through.
  9. While baking, whisk together confectioner’s sugar, melted butter, lemon zest, and lemon juice to form the glaze.
  10. Brush glaze over warm biscuits immediately after baking and serve warm.

Notes

  • Keep butter very cold for maximum flakiness.
  • Do not overmix dough to avoid tough biscuits.
  • You can add a pinch of nutmeg or cardamom for extra flavor.
  • To make dairy-free, use plant-based butter and buttermilk alternatives.
  • These biscuits are best served fresh but can be stored in an airtight container for up to 2 days.
