Description

The Blackberry Vanilla Hazelnut Tart is a delightful summer dessert with a buttery hazelnut crust, creamy vanilla custard, and sweet-tart blackberries. Perfect for summer gatherings or any special occasion, this tart is sure to impress.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup toasted and finely chopped hazelnuts
  • 23 tablespoons ice water
  • 3 egg yolks
  • 1/2 cup granulated sugar (for custard)
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blackberries
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a tart pan.
  2. In a bowl, combine flour, sugar, salt, and chopped hazelnuts. Add the chilled butter and mix until the texture resembles coarse crumbs.
  3. Slowly add ice water, mixing until dough forms. Press dough into the tart pan to form an even crust.
  4. Bake the crust for 12-15 minutes, or until golden brown. Let it cool completely.
  5. In a saucepan, heat the milk over medium heat until warm.
  6. In a separate bowl, whisk together egg yolks and sugar until light and fluffy.
  7. Slowly pour the warm milk into the egg mixture while whisking constantly to prevent curdling.
  8. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon. Strain through a fine-mesh sieve to remove any cooked egg bits.
  9. Stir in the vanilla extract and let the custard cool to room temperature.
  10. Once the crust and custard are cool, pour the custard into the crust and spread it evenly.
  11. Arrange the fresh blackberries on top of the custard in a decorative pattern.
  12. Sprinkle toasted hazelnuts over the tart and finish with a light dusting of powdered sugar.
  13. Chill the tart for at least 2 hours before serving to allow it to set.

Notes

  • Make sure the custard is completely cooled before adding it to the tart crust.
  • Toast the hazelnuts for added flavor and texture.
  • For a more delicate flavor, use fresh, in-season blackberries.
  • Dusting the tart with powdered sugar just before serving gives it an elegant finish.
