Ingredients
Scale
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup toasted and finely chopped hazelnuts
- 2–3 tablespoons ice water
- 3 egg yolks
- 1/2 cup granulated sugar (for custard)
- 1 1/2 cups whole milk
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blackberries
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a tart pan.
- In a bowl, combine flour, sugar, salt, and chopped hazelnuts. Add the chilled butter and mix until the texture resembles coarse crumbs.
- Slowly add ice water, mixing until dough forms. Press dough into the tart pan to form an even crust.
- Bake the crust for 12-15 minutes, or until golden brown. Let it cool completely.
- In a saucepan, heat the milk over medium heat until warm.
- In a separate bowl, whisk together egg yolks and sugar until light and fluffy.
- Slowly pour the warm milk into the egg mixture while whisking constantly to prevent curdling.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon. Strain through a fine-mesh sieve to remove any cooked egg bits.
- Stir in the vanilla extract and let the custard cool to room temperature.
- Once the crust and custard are cool, pour the custard into the crust and spread it evenly.
- Arrange the fresh blackberries on top of the custard in a decorative pattern.
- Sprinkle toasted hazelnuts over the tart and finish with a light dusting of powdered sugar.
- Chill the tart for at least 2 hours before serving to allow it to set.
Notes
- Make sure the custard is completely cooled before adding it to the tart crust.
- Toast the hazelnuts for added flavor and texture.
- For a more delicate flavor, use fresh, in-season blackberries.
- Dusting the tart with powdered sugar just before serving gives it an elegant finish.
