- 2 cups fresh blackberries
- 2 cups all-purpose flour
- 1/2 cup granulated sugar (plus extra for sprinkling)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream (plus extra for drizzling)
- 2 tablespoons fresh thyme, finely chopped (plus extra for garnish)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the fresh blackberries with 2 tablespoons of sugar and set aside.
- In a large mixing bowl, whisk together the flour, 1/2 cup of sugar, baking powder, and salt. Add the cold butter and work it into the flour until it resembles coarse crumbs.
- Pour in the heavy cream, chopped thyme, and vanilla extract. Stir gently until the dough just comes together.
- Turn the dough out onto a floured surface, knead gently, and pat into a rectangle about 1-inch thick. Cut into rounds.
- Place the rounds on the baking sheet, brush with heavy cream, sprinkle with sugar, and bake for 15-20 minutes until golden brown.
- While baking, heat 1/2 cup of heavy cream with fresh thyme in a saucepan, let steep, then strain and cool.
- Once baked, slice the shortcakes in half, layer with macerated blackberries, and drizzle with thyme-infused cream.
- Serve immediately, drizzled with more thyme-infused cream and garnished with thyme.
Notes
- Store leftovers in an airtight container at room temperature for up to two days.
- Reheat in a preheated oven at 350°F (175°C) for 5-10 minutes.
