A delightful dessert that combines sweet blackberries and savory thyme, perfect for summer gatherings.


Ingredients

  • 2 cups fresh blackberries
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar (plus extra for sprinkling)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream (plus extra for drizzling)
  • 2 tablespoons fresh thyme, finely chopped (plus extra for garnish)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the fresh blackberries with 2 tablespoons of sugar and set aside.
  3. In a large mixing bowl, whisk together the flour, 1/2 cup of sugar, baking powder, and salt. Add the cold butter and work it into the flour until it resembles coarse crumbs.
  4. Pour in the heavy cream, chopped thyme, and vanilla extract. Stir gently until the dough just comes together.
  5. Turn the dough out onto a floured surface, knead gently, and pat into a rectangle about 1-inch thick. Cut into rounds.
  6. Place the rounds on the baking sheet, brush with heavy cream, sprinkle with sugar, and bake for 15-20 minutes until golden brown.
  7. While baking, heat 1/2 cup of heavy cream with fresh thyme in a saucepan, let steep, then strain and cool.
  8. Once baked, slice the shortcakes in half, layer with macerated blackberries, and drizzle with thyme-infused cream.
  9. Serve immediately, drizzled with more thyme-infused cream and garnished with thyme.

Notes

  • Store leftovers in an airtight container at room temperature for up to two days.
  • Reheat in a preheated oven at 350°F (175°C) for 5-10 minutes.
