Description

Blueberry Banana Baked Oatmeal Cups are wholesome, bite-sized snacks that combine the natural sweetness of bananas with tart blueberries, creating a comforting and satisfying breakfast or snack option with a chewy oat texture and fruity bursts.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 ripe bananas, mashed
  • 1 cup milk (dairy or non-dairy alternative)
  • 1 egg (or flax egg for vegan)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard muffin tin or line with paper liners.
  3. In a large bowl, whisk together rolled oats, baking powder, salt, and cinnamon.
  4. In another bowl, mash bananas and mix with milk, egg, maple syrup, and vanilla extract until combined.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined.
  6. Fold in blueberries carefully to avoid crushing.
  7. Fill muffin tin cups about three-quarters full with batter.
  8. Bake for 20-25 minutes until tops are golden and a toothpick inserted comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool or serve warm.

Notes

  • Use certified gluten-free oats for a gluten-free version.
  • Substitute dairy milk with almond, coconut, or other plant-based milks.
  • For a vegan option, replace the egg with a flax egg (1 tbsp ground flaxseed + 2.5 tbsp water).
  • Maple syrup can be replaced with agave nectar or honey (omit honey for sugar-free).
  • Try swapping blueberries for other berries or diced fruits like apples or peaches.
