Description

Blueberry Cookies with Streusel Topping are chewy, crumbly, and bursting with fresh blueberries and sweet jam, finished with a cinnamon-kissed buttery streusel for the ultimate comforting treat.

Ingredients

Scale
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fresh blueberries
  • 1/3 cup blueberry jam
  • For the Streusel Topping:
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup cold butter, cubed
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Prepare the streusel by combining flour, brown sugar, cubed cold butter, cinnamon, and salt. Cut butter into the dry mix until crumbly. Refrigerate.
  2. Cream softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Add the egg and vanilla extract. Mix until combined.
  4. In another bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  5. Gently fold in fresh blueberries. Scoop dough onto a parchment-lined baking sheet.
  6. Add a dollop of blueberry jam on top of each cookie and swirl gently. Sprinkle chilled streusel topping generously over each cookie.
  7. Bake at 375°F (190°C) for 12–15 minutes until golden at the edges but soft in the center.
  8. Cool cookies on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use frozen blueberries if fresh ones are not available.
  • Add lemon zest for a bright, citrusy twist.
  • Cookies are best eaten the day of baking but can be stored in an airtight container for up to 3 days.
  • Refrigerate the streusel while preparing dough to keep it crumbly during baking.
