Description

Blueberry Cream Pie is a luscious dessert featuring a flaky crust, a layer of fresh blueberry filling, and a smooth cream cheese topping. It’s the perfect combination of fruity and creamy textures, ideal for summer gatherings.

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ teaspoon salt
  • 46 tablespoons cold water
  • 2 cups fresh blueberries
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (for blueberry filling)
  • 1 cup heavy whipping cream
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for cream filling)

Instructions

  1. In a large bowl, mix flour and salt. Cut in chilled butter until crumbly. Add cold water gradually until dough forms. Chill for 30 minutes.
  2. In a saucepan, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Cook over medium heat for 5–7 minutes until thick. Cool.
  3. Preheat oven to 375°F (190°C). Roll out dough and place in 9-inch pie pan. Prick base, add parchment and pie weights. Bake for 15 minutes, then 10 more minutes without weights until golden. Cool.
  4. Whip heavy cream until soft peaks form. In another bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream gently.
  5. Spread blueberry filling over cooled crust. Top with cream filling and smooth the surface. Drizzle leftover blueberry juice and garnish with fresh blueberries if desired.
  6. Refrigerate the pie for at least 2 hours before serving.

Notes

  • For gluten-free, use almond flour crust or pre-made GF crust.
  • Use vegan cream cheese and coconut cream for a dairy-free version.
  • Add lemon zest or raspberries for a flavor twist.
  • Pie is best served chilled.
