- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and cubed
- ¼ teaspoon salt
- 4–6 tablespoons cold water
- 2 cups fresh blueberries
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract (for blueberry filling)
- 1 cup heavy whipping cream
- 1 cup cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract (for cream filling)
Instructions
- In a large bowl, mix flour and salt. Cut in chilled butter until crumbly. Add cold water gradually until dough forms. Chill for 30 minutes.
- In a saucepan, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Cook over medium heat for 5–7 minutes until thick. Cool.
- Preheat oven to 375°F (190°C). Roll out dough and place in 9-inch pie pan. Prick base, add parchment and pie weights. Bake for 15 minutes, then 10 more minutes without weights until golden. Cool.
- Whip heavy cream until soft peaks form. In another bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream gently.
- Spread blueberry filling over cooled crust. Top with cream filling and smooth the surface. Drizzle leftover blueberry juice and garnish with fresh blueberries if desired.
- Refrigerate the pie for at least 2 hours before serving.
Notes
- For gluten-free, use almond flour crust or pre-made GF crust.
- Use vegan cream cheese and coconut cream for a dairy-free version.
- Add lemon zest or raspberries for a flavor twist.
- Pie is best served chilled.
