Instructions
- Preheat your oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and sugar in a medium bowl. Press into a 9-inch springform pan and bake for 8–10 minutes. Let cool.
- In a large bowl, beat softened cream cheese until smooth. Add sugar and vanilla, and mix well.
- Add eggs one at a time, mixing on low speed until just combined.
- Fold in sour cream and blueberries gently.
- Pour the cheesecake filling over the crust and smooth the top.
- In another bowl, combine flour, oats, brown sugar, and cinnamon. Add softened butter and mix until crumbly.
- Sprinkle the crumble topping over the cheesecake evenly.
- Bake for 55–60 minutes until edges are set and center is slightly jiggly.
- Turn off oven and let cheesecake sit inside for 1 hour.
- Remove from oven, let cool to room temperature, then refrigerate for at least 4 hours or overnight.

- Do not overmix the cheesecake batter to avoid cracks.
- You can use frozen blueberries if fresh ones are unavailable.
- Refrigerating overnight improves texture and flavor.
