Description

Blueberry Delight is a layered no-bake dessert with a buttery graham cracker and pecan crust, a fluffy cream cheese filling, sweet blueberry pie topping, and whipped topping. It’s simple, creamy, and perfect for summer gatherings.


Ingredients

  • 1 (140 g) sleeve graham crackers (9 sheets)
  • 1 cup (112 g) pecans
  • 1/2 cup (113 g) butter (1 stick), melted
  • 2 Tbsp granulated sugar
  • 8 oz (226 g) cream cheese, room temperature
  • 1 cup (120 g) powdered sugar
  • 16 oz (453 g) whipped topping (two 8 oz tubs), thawed & divided
  • 42 oz (1190 g) blueberry pie filling (two 21 oz/595 g cans)
  • 2 Tbsp chopped pecans for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, pulse graham crackers and pecans into fine crumbs.
  3. In a medium bowl, combine melted butter and granulated sugar. Stir in crumb mixture until evenly coated.
  4. Firmly press the crumb mixture into the bottom of a 13×9-inch pan. Bake for 8–10 minutes, then cool completely.
  5. In a large bowl, beat cream cheese and powdered sugar until smooth and creamy.
  6. Fold in one 8 oz container of whipped topping until well combined. Spread mixture evenly over cooled crust.
  7. Dollop blueberry pie filling over cream cheese layer and spread evenly.
  8. Spread remaining whipped topping over the blueberry layer.
  9. Sprinkle chopped pecans on top if desired. Cover and refrigerate for at least 2 hours or overnight.
  10. Cut into 15 squares and serve. Garnish with extra blueberries or pecans if desired.
