  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter (or non-dairy alternative)
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. In a small saucepan over medium heat, combine blueberries, granulated sugar, lemon juice, and vanilla extract. Cook for 5–8 minutes until the mixture thickens. Set aside to cool.
  2. Flatten each slice of bread with a rolling pin, being careful not to tear it.
  3. Place a spoonful of blueberry filling on one end of each bread slice, then roll tightly. Repeat for all slices.
  4. In a bowl, whisk together eggs, milk, and cinnamon.
  5. Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture, coating all sides.
  6. Cook roll-ups in the skillet seam-side down, turning occasionally, for 3–4 minutes on each side until golden brown.
  7. Transfer to a paper towel-lined plate. Dust with powdered sugar and serve warm with optional toppings like syrup or whipped cream.
