Instructions
- In a small saucepan over medium heat, combine blueberries, granulated sugar, lemon juice, and vanilla extract. Cook for 5–8 minutes until the mixture thickens. Set aside to cool.
- Flatten each slice of bread with a rolling pin, being careful not to tear it.
- Place a spoonful of blueberry filling on one end of each bread slice, then roll tightly. Repeat for all slices.
- In a bowl, whisk together eggs, milk, and cinnamon.
- Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture, coating all sides.
- Cook roll-ups in the skillet seam-side down, turning occasionally, for 3–4 minutes on each side until golden brown.
- Transfer to a paper towel-lined plate. Dust with powdered sugar and serve warm with optional toppings like syrup or whipped cream.
