Description
Blueberry lemon hand pies combine the tang of lemon with the sweetness of blueberries in a flaky, golden pastry, offering a refreshing dessert perfect for any occasion.
Ingredients
Scale
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup unsalted butter, cold and cubed
- 6 tablespoons ice water
- 2 cups fresh blueberries (or frozen, thawed)
- Zest of 1 lemon
- 2 tablespoons lemon juice
- ⅓ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- ¼ teaspoon cinnamon (optional)
- 1 egg (for egg wash)
- 1 tablespoon milk
- Extra sugar for sprinkling (optional)
Instructions
- In a large bowl, whisk together the flour, salt, and sugar. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- In a medium bowl, combine the blueberries, lemon zest, lemon juice, sugar, cornstarch, vanilla extract, and cinnamon (if using). Gently mix until evenly coated.
- Preheat the oven to 400°F (200°C). On a floured surface, roll out one disc of dough to about ¼-inch thickness. Use a round cutter (4-5 inches) to cut out circles. You should get 8-10 circles.
- Place a heaping tablespoon of blueberry filling in the center of each dough circle. Fold the dough over to form a half-moon shape, sealing the edges with a fork or your fingers. Repeat with the second disc of dough.
- Place the hand pies on a parchment-lined baking sheet. Beat the egg with milk and brush over the pies. Sprinkle sugar on top, if desired. Bake for 20-25 minutes, or until golden brown. Allow to cool slightly before serving.
Notes
- For a gluten-free option, replace all-purpose flour with a gluten-free flour blend.
- Use vegan butter or non-dairy margarine for a dairy-free version.
- For a sugar-free version, use a sugar substitute like erythritol or stevia, though some substitutes may alter the flavor.
- Consider adding a pinch of nutmeg, or substituting diced apples or raspberries for added flavor.
