  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • ½ cup all-purpose flour (for streusel)
  • ½ cup rolled oats
  • ½ cup brown sugar, packed (for streusel)
  • ½ teaspoon ground cinnamon
  • ¼ cup unsalted butter, melted (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, whisk together 2 cups flour, baking soda, baking powder, and salt.
  2. In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
  3. Add the egg and vanilla extract to the creamed mixture and beat until fully combined.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the blueberries.
  6. For the streusel, combine flour, oats, brown sugar, and cinnamon. Stir in melted butter until mixture forms coarse crumbs.
  7. Scoop dough onto a lined baking sheet, spacing about 2 inches apart. Top each cookie with streusel.
  8. Bake for 12–15 minutes, or until edges are golden.
  9. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Don’t overmix the dough once the flour is added to avoid tough cookies.
  • If using frozen blueberries, there’s no need to thaw before adding to dough.
  • Cookies freeze well for up to 3 months when stored in an airtight container.
  • Try adding lemon zest or white chocolate chips for a flavor twist.
  • For best texture, use cold butter in the streusel topping.
