Description

These Blueberry Oatmeal Bars are soft, chewy, and bursting with juicy blueberries. They’re perfect for a healthy snack or a quick breakfast on-the-go.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup brown sugar (packed)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, mix rolled oats, flour, brown sugar, baking powder, baking soda, salt, and cinnamon until combined.
  3. In a separate bowl, whisk together melted butter, honey or maple syrup, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Spread the mixture evenly into the prepared baking dish. Press down lightly to flatten.
  6. Bake for 25–30 minutes, or until the edges are golden and a toothpick comes out clean.
  7. Let the bars cool in the pan for 10 minutes, then lift them out using the parchment overhang. Cool completely on a wire rack before cutting into squares.

Notes

  • Use maple syrup instead of honey for a vegan version.
  • You can replace blueberries with raspberries or chopped bananas.
  • Substitute butter with coconut oil for a dairy-free option.
