These Blueberry Oatmeal Bars are soft, chewy, and bursting with juicy blueberries. They’re perfect for a healthy snack or a quick breakfast on-the-go.

- 2 cups rolled oats
- 1 cup all-purpose flour (or gluten-free flour)
- 1/2 cup brown sugar (packed)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup unsalted butter (melted)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving overhang for easy removal.
- In a large bowl, mix rolled oats, flour, brown sugar, baking powder, baking soda, salt, and cinnamon until combined.
- In a separate bowl, whisk together melted butter, honey or maple syrup, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- Spread the mixture evenly into the prepared baking dish. Press down lightly to flatten.
- Bake for 25–30 minutes, or until the edges are golden and a toothpick comes out clean.
- Let the bars cool in the pan for 10 minutes, then lift them out using the parchment overhang. Cool completely on a wire rack before cutting into squares.
Notes
- Use maple syrup instead of honey for a vegan version.
- You can replace blueberries with raspberries or chopped bananas.
- Substitute butter with coconut oil for a dairy-free option.
- These bars store well at room temperature for 2 days or refrigerated for up to 5 days.
