Instructions
- Preheat oven to 325°F (160°C). Grease a springform pan.
- Make the crust by combining graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into the bottom of the pan. Chill while preparing filling.
- In a large bowl, beat cream cheese until smooth and fluffy.
- Gradually add sugar, then eggs one at a time, mixing well after each.
- Add vanilla extract and heavy cream. Blend until smooth.
- Mix in melted chocolate and cocoa powder until fully combined.
- Pour cheesecake batter over the crust and smooth the top.
- Bake for 55–65 minutes or until the center is almost set. Let cool to room temperature.
- Chill in the refrigerator for at least 4 hours or overnight.
- Before serving, prepare a pudding-like custard topping using milk, cornstarch, sugar, and butter. Cool, then spread over the top.
- Garnish with whipped cream, chocolate shavings, or cocoa powder if desired.
