  • 6 ounces semisweet chocolate, melted and cooled

Instructions

  1. Preheat oven to 325°F (160°C). Grease a springform pan.
  2. Make the crust by combining graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into the bottom of the pan. Chill while preparing filling.
  3. In a large bowl, beat cream cheese until smooth and fluffy.
  4. Gradually add sugar, then eggs one at a time, mixing well after each.
  5. Add vanilla extract and heavy cream. Blend until smooth.
  6. Mix in melted chocolate and cocoa powder until fully combined.
  7. Pour cheesecake batter over the crust and smooth the top.
  8. Bake for 55–65 minutes or until the center is almost set. Let cool to room temperature.
  9. Chill in the refrigerator for at least 4 hours or overnight.
  10. Before serving, prepare a pudding-like custard topping using milk, cornstarch, sugar, and butter. Cool, then spread over the top.
  11. Garnish with whipped cream, chocolate shavings, or cocoa powder if desired.
